Pimento Cheese - Cheese Ball

Pimento Cheese - Cheese Ball
yields: 1  - Four inch cheese ball

12 ounces prepared pimento cheese

1 cup toasted pecan pieces, finely chopped

4 green onions, finely chopped 

1 Tablespoon creole spice

Instructions: Bring pimento cheese to room temperature. With gloved hands, shape the pimento cheese into a ball and then place in the refrigerator for 15 minutes. After slightly chilling the cheese ball, roll the ball in the green onions and creole spice. Finish assembling your cheese ball by rolling in the toasted, chopped pecans. Before serving, bring the cheese ball to room temperature for 10-15 minutes before serving with your choice of crackers, crudité or pretzels.
